What does Safeguard mean?
Safeguard is a ‘Jack speak – naval lingo’ term used to confirm your telling the truth and not having someone on. Onboard HM’s finest ships, a fire would be prefixed with safeguard, safeguard, safeguard, to allow the ships company to know its not an exercise.
Not only is this chilli chutney mind-blowingly hot, it’s unique chilli blend also tastes fabulous, for all of about 3 seconds before the heat wallops you.
The chillies we use in this sauce are individually some of the hottest in the world, but each have different uses too.
Sambal Chilli is typically a base for a seafood dish and mixed with other ingredients such as shrimp paste, fish sauce, garlic, ginger, shallot, scallion, sugar, lime juice, and rice vinegar or other vinegars.
Prik Ka Riang Chillies are shorter than prik ki nu, they’re proportionally wider and much hotter. They stem from the classic “Bird Pepper”, they’re very small, very hot and grow point up. The ones we use are typically red, and are sourced from India.
The Habanero Chilli comes from the Amazonas region, and from there it was spread through Mexico. It is also closely related to the Caribbean variety the Scotch Bonnet.
The Bullet Chilli, is as its name would suggest, bullet shaped. It’s a medium-hot chill and quite fruity in flavour. Its a partial contributor to the fruitiness before Safeguard’s trident whack.
